Chicken Stew

Vegetable stew and appams (fluffy pancakes made of rice flour) is very popular as breakfast in Kerala. And for those eat meat, the veggies can be replaced with chicken to make some delectable chicken stew with appams as breakfast, lunch or even dinner. Here's the recipe.

Ingredients
  • 500 gms chicken.
  • One big onion sliced
  • 2 inch piece ginger chopped
  • 1 cup coconut milk
  • handful of curry leaves
  • 1 inch piece cinnamon
  • 2 pods of cardamom
  • 2 cloves
  • 1 petal of star anise
  • 1 big bay leaf
  • 5-6 pepper corns

Method


  • Heat oil in a thick bottomed vessel. Add ginger and curry leaves, saute for a minute and add onion.

  • Cook it for five minutes and add cinnamon, cardamom, cloves, pepper, star anise and bay leaf.

  • Cook for 3-4 minutes, add chicken, salt and cook on a low flame for 10 more minutes.

  • Add 1/2 cup water, simmer for a minute, add coconut milk and serve it hot with fluffy appams.
