Healthy Snack Time: Beetroot & Paneer Cutlets
Hi again! I have been attempting to watch my waistline once again (well, attempting because I occasionally do give into a samosa- my favourite snack or eating rice- being a South Indian, that's a hard one to skip). Anyway, I found myself in the kitchen scavenging for something that wouldn't add any inches and put together a few ingredients that were available to make a healthy snack. I'd call them sweet 'n' spicy beetroot-paneer cutlets.
Ingredients:
- One beetroot, roughly cut into pieces
- Two potatoes, roughly cut into pieces
- One onion chopped
- 1 tsp mustard sauce
- 400 gms paneer
- 1 1/2 tsp ginger-garlic paste
- 1/2 tsp garam masala
- 1 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp pepper powder
- 1 tsp red chili powder
- 1 tsp tomato sauce
- 1/4 tsp sugar
- 2-3 tbsp besan or gram flour
- 1/2 tsp kasuri methi
- salt to taste
- 3-4 tbsp rice flour
Method:
- Steam beetroot and potatoes till they are done.
- In the mean while, in a large vessel, crumble paneer, add chopped onion, all the spices and gram flour and mix well.
- Once the cooked beetroot and potatoes cool down, add them to the mixture as well and mix it.
- Make shapes of small cutlets with the mixture, coat them in rice flour and cook in a shallow pan giving it 5 minutes on each side or till it turns light brown.
- Serve with yogurt and pudina (mint) chutney.
This can be a meal in itself if rolled into rotis to make rolls.
