Breakfast Pie

I've been thinking of interesting ways to cook eggs when I thought of baking it into a thick omelette. With cream, mushrooms and potatoes, this has been so far one of the best ways I've eaten eggs. It is a winner as it keeps you full for a long time



Ingredients:
4 eggs
6-7 mushrooms steamed and quartered
2 small potatoes boiled and cubed
one medium onion sliced and browned.
3 tbsp cream cheese
4 cloves of garlic crushed
1 1/2 tsp pepper

Method:
In a baking dish, mix all ingredients together. whisk using an egg beater and make sure it is evenly spread out. Set the microwave to 120 deg and bake for 4-5 minutes. Serve hot with ketchup and chili sauce with coffee on the side.
salt to taste
