Scrambled Eggs with Pineapple Relish
Scrambled eggs is the easiest, simplest breakfast option around. But at times, one does tend to get bored of it. Here's how I gave it a fresh twist.
Ingredients
Eggs- 2
Milk- 5 tbsp
Butter- 1 tbsp
Hot pineapple chutney or pineapple jam with chilli- 2 tbsp
Potato- 1 small- cut into bite sized pieces and boiled.
Spinach leaves- handful
Garlic- 2 cloves
Pepper-11/2 tsp or to taste
Salt- to taste
Method
Crush the garlic clove. In a bowl, crack the eggs and whisk in the milk till it becomes frothy.
Heat butter in a pan, add garlic and the eggs. add the salt, pepper, potatoes and spinach.
Stir it over a low flame till it starts to scramble. Add the pineapple sauce and serve with toast or as is!
