Easy Rice Dessert
Rice dessert, you ask? Why not call it kheer or payasam? Simply because, though the flavouring may be similar, the consistency isn't. Plus, this recipe will not need you to stand over the pot, stirring it frequently as for mushy kheer.
Ingredients
Long grained (basmati) or regular rice- 1 cup
Milk- 2 cups
Water- 1 1/2 cups
Grated coconut- 1 cup
Cardamom pods- 5-6
Sugar- 3/4 cup or more depending on your taste
1 cinnamon stick or a pinch or nutmeg (optional)
Method
Wash the rice and transfer it into a deep dish. Pour water and bring it to a boil on a high flame.
Lower the flame and add the milk. Stir in the sugar and let simmer with the lid on for five minutes.
Crush cardamom pods using a mortar pestle, add that to the rice along with the grated coconut, and add 1/4 cup water or milk. Cover it again and let it simmer for another 10-12 minutes.
Serve hot or cold.
