Mango Pickle
Hope all you had a great weekend and aren't bogged down by Monday blues. The weather is a little grey here, thanks to the monsoons, as I am sure it is for most of the country. Even then, I have access to some raw mangoes. And that meant making fresh, instant mango pickle. This is my favourite recipe.
Ingredients:
Raw mangoes cut into small pieces- 2
Red chilli powder- 3 tsps or as per your spice tolerance.
Fenugreek seeds- 2 tsp
Mustard seeds- 3 tsp
Asafetida or hing- 1/2 tsp
Salt- 3-4 tsp or to taste
Sesame oil- 1 cup
Method
Heat a kadhai and dry roast fenugreek seeds and one teaspoon mustard seeds. Once it cools down, powder it. Now, mix this powder along with the salt, asafetida and red chilli powder to the cut mango pieces.
In the same wok, heat the oil. Once hot, splutter the remaining mustard seeds and add it to the mango and spices mixture. Instant mango pickle is ready to be served!
