Mediterranean Pasta
Having lived in a vegetarian household- my in-laws are vegetarians, I have been inspired to try out more and more vegetarian recipes, simply to break the notion that vegetarian food is boring. And with that in mind, I attempted this simple pasta with basic ingredients like eggplant and sweet corn.
Ingredients:
Durum wheat penne pasta- 1 cup
Eggplant, sliced- 2
Sweet corn kernels- 1/2 cup
Garlic cloves, crushed- 3-4
Peppercorns- 8
Sesame seeds, black or white- 1 tsp
Oregano- 1 tsp
Basil- 1/2 tsp
Salt to taste.
Method:
Slice eggplant, rub salt and keep it aside. In the meantime, cook the pasta on a low fire for about 20 minutes.
In a pan, heat olive oil, add the garlic, sesame seeds and pepper corn. Add the eggplant, salt and saute for about five minutes. Add the corn, cook for two more minutes. Add the pasta, oregano, basil, half cup water, and let it cook on a low flame for 3-4 minutes more. Do not cover the pan.
Serve hot!
